Here's an idea

Pick up some of those sour candy apple rings and use them as the Olympic Rings on the top of your cake.

Or you could cut circles out of various colors of Fruit Roll Ups.

You could make an Olympic Torch out of a Tootsie Roll or piece of chocolate. Use a bit of red Fruit Roll Up as the flame.

For a bigger Olympic Torch you could decorate a small ice cream cone (without the ice cream) and again, use a red Fruit Roll Up as the flames.

The Olympic Rings and the Torch are probably the two most recognizable Olympic symbols.
