Alexandra, thank you for taking the time to talk with us about the American Cancer Society's More Birthdays and the Better for you Birthday Cake competition.
First of all, how did you get involved with the American Cancer Society's More Birthdays?

I found out about the competition via email through my school and when I saw that it was sponsored by the American Cancer Society, I jumped at the opportunity.

Your winning Red Velvet cake looks so good - how long have you been creating cakes?
Alexandra
I have been baking at home for as long as I can remember! My mom is a wonderful cook and baker, as was my Grandmother. The love of good food definitely runs in our family.
I found that I took more of a liking to baking somewhere around middle school and loved challenging myself in my free time with creating different cakes. I would pick up a cookbook and the more steps a recipe had, or the more complicated it was, the greater the challenge (and more fun) it was for me.

The competition made some very creative cakes too - were you nervous about competing with the other contestants?
Alexandra - More Birthdays
I was definitely a little intimidated going into the finals and not knowing what the other competitors created. The guidelines for the contest left a lot of room for creativity and I think that really showed in the variety of flavors and concepts with the cakes that were shown.

Will you share your cake recipe with our site visitors?
What advice do you have for our site visitors who want to create a more healthy birthday cake for their child's birthday?

I suggest taking a look at on of your favorite recipes and seeing where some changes can be made.
Typically, sugar can be reduced in a recipe between 1/3 and 1/2 the amount listed. If you would prefer to remove some fat, you can substitute out some of the eggs for egg whites. (For instance, my cake has 2 whole eggs and 2 egg whites instead of 3 whole eggs. Please note that this can change the texture slightly and may change the baking time).
Also, if you wanted to reduce the amount of oil or butter in a recipe, between 1/3 and 1/2 of the amount can be replaced with applesauce, which gives the added bonus of additional moisture to a cake.
In addition. you can use reduced fat or low fat cream cheese, sour cream or yogurt instead of full fat versions.
Adjustments can also be made to frostings and fillings. When working on a frosting, you can begin with a smaller amount of sugar and adjust the frosting to taste. You will be amazed at how much sugar ends up in frostings and how little you sometimes need.
However, it is important to note that adjustments/substitutions should be tested a bit before the big day. It's best to start with smaller quantities and then see how you like the results.

Finally Alexandra, what's the "secret to success" when it comes to creating a cake?
Alexandra - More Birthdays
Hmmmm, the secret to success? I have this? Hoorah for me!
To have a successful cake, I think you should start with a recipe you really enjoy and trust.
Use the best ingredients you can get your hands on - respect for the quality of the ingredients that you put in your cake really contributes to the final outcome.
Give yourself ample time to work on your cake - because things WILL happen; the phone will ring, the dog will somehow get out the back door, some terrible tragedy will befall your child's favorite toy at the exact moment you need to concentrate on your cake - so give yourself enough time to deal with those things and (eventually) you'll get your cake completed.
And finally, enjoy it! The love and happiness that you put into your homemade cake is that special, singular ingredient that will always trump any store bought creation.
